I work for a graphics company and am wondering if I can start my own business doing what they do without getting into trouble. They made me sign a document saying that I can't even after termination.

As a Franchise Attorney I can say you need to show the document you signed to an attorney. Generally, to be enforceable, noncompetes must be reasonable in time, geographic scope and prohibited activity. Consult with a good business or franchise attorney in your area for specific advice.
