I'm an architect. My firm is asking all employees to sign a non-compete which would not allow us to go a competing firm for one year after leaving. If I refuse to sign it and get let go, can I fill for and collect unemployment ?

In my opinion, if you refuse to sign the agreement, the employer can fire you but you should be entitled to receive unemployment. However, I cannot state that definitively as I am not aware what the DUA's policy is in regard to that specific situation. You may want to contact the DUA and ask them.
